There is nothing quite like a truly ripe summer tomato, and right now it is finding its way onto both our Bar and main dining room menus.
On the Bar menu, the Heirloom Tomato Salad keeps the focus beautifully on the fruit itself, pairing it with aged balsamic and feta, bloomed basil seeds, basil oil, and fried basil. It is fresh, bright, and layered with just enough richness and texture to make every bite interesting.
In the main dining room, Chef Gagné takes the season in a different direction with an Heirloom Tomato Pie featuring okra and cheddar cheese, basil, garlic aioli, and crispy cheese straws. It is comforting, savory, and unmistakably Southern, while still feeling refined and thoughtful.
Two very different dishes, both celebrating tomatoes at their best.
The Hermann Moser Gebling Grüner Veltliner 2023 is a fresh, lively white wine from Kremstal, Austria, and a wonderfully versatile bottle to have on hand.
Mineral notes lead the way, followed by vibrant aromas of yellow apple, fresh herbs, and a subtle savory character. Crisp and refreshing, it has the brightness to complement lighter dishes while offering enough structure to stand alongside richer, smokier flavors.
Grüner Veltliner is famously food-friendly, and this bottle pairs beautifully with bacon, smoked ham, charcuterie, grilled fish, and lightly spicy Asian dishes. It is also one of the rare wines that works especially well with traditionally challenging ingredients such as asparagus and artichokes.
Available at Galloway’s Wine Shop for $24—an excellent bottle for late-summer entertaining or discovering a new favorite white.
Divina Caramelized Onion Jam is a deeply savory, delightfully sweet, and versatile gourmet spread that elevates everyday meals with zero kitchen labor. It captures the rich, mellow sweetness of hours-long caramelized onions instantly, offering a slow-cooked taste. The jam expertly blends sweet, savory, and a hint of tart tang, creating a balanced profile.
Made with clean ingredients, it is vegan, non-GMO, gluten-free, and dairy-free. This jam is best used on burgers and sandwiches such as grilled cheese or paninis. It also pairs well with cheese boards, complementing goat cheese, brie, or sharp blue cheeses. Additionally, it can be stirred into warm beef broth to quickly create a rich French onion soup.
