An amuse-bouche may be small, but its role in the meal is anything but.
This first bite sets the tone for everything that follows. It offers a glimpse into the kitchen’s creativity, introduces the flavors of the season, and gently awakens the palate for the courses to come.
Lately, Monte, a member of Chef Paul Gagne’s culinary team, has been creating some of the most visually striking—and delicious—amuse-bouches to begin the evening. Each one is thoughtful, beautifully composed, and just unexpected enough to make you pause before taking that first bite.
It is a wonderful reminder that dining is about more than simply
moving from one course to the next. Sometimes, the smallest taste can create the greatest sense of anticipation.
There is something especially inviting about a glass of rosé Champagne, and the Marc Hébrart Premier Cru Brut Rosé is a beautiful example.
A blend of equal parts Pinot Noir and Chardonnay, with a small addition of red wine, it pours a delicate pale salmon pink. Aromas of fresh strawberries and peaches mingle with notes of pastry dough, while a soft, lively mousse gives the wine a wonderfully elegant texture.
Crisp, refreshing, and approachable, this is a Champagne that feels celebratory without needing a special occasion.
Enjoy it as an aperitif, pair it with smoked salmon, shellfish, charcuterie, or lighter summer dishes—or simply open a bottle because the evening calls for bubbles.
From Champagne, France, and available at Galloway’s Wine Shop for $78.
