Fearrington looks forward to welcoming pioneering power couple Xavier & Nicole Rolet, the owners of Chêne Bleu from the Southern Rhône Valley of France. Their work represents a groundbreaking chapter for French viticulture—creating world-class, biodynamic 'Super Rhônes' that challenge traditional estate boundaries and place their high-altitude vineyard firmly at the center of international fine wine conversations. Chef Paul Gagne and Wine Director Troy Revell will be creating a custom five-course meal to pair with eight selections, presented to you by the owners themselves! CHÊNE BLEU

The multi-award-winning wines of Chêne Bleu are produced at their medieval vineyard nestled in a truly exceptional site, high up in the Dentelles de Montmirail near Châteauneuf-du-Pape. Way up in the mighty Mont Ventoux foothills above Gigondas in the most northern county of Provence, cradled in the sun-drenched southwestern Rhône, the Ventoux region is establishing itself as a hidden gem for the world's finest wines.

At the forefront of this movement is Chêne Bleu, a daring young winery founded in 2006 by Xavier & Nicole Rolet on the ruins of a 9th-Century priory. A pioneer of regenerative, organic, biodynamic and bee-friendly viticulture, Chêne Bleu specializes in sustainably made, age-worthy, high-altitude wines that temper the region’s signature power with unusual freshness and acidity.

NICOLE & XAVIER ROLET

Xavier Rolet, former CEO of the London Stock Exchange, comes from a French family that included the Domaine Rolet winemaking dynasty in the Jura. A passionate conservationist, he patiently scoured the French countryside 30 years ago for a vineyard that combined exceptional terroir and a pristine pollution-free natural environment that allowed him to set the stage for pesticide-free, regenerative organic viticulture. His ground-breaking work has inspired many winemakers and extended to regenerative agriculture and ranching.  Among his many accolades, he has been knighted by the Queen of England and received the French Legion of Honor.

After a career in geopolitical think tanks, Chêne Bleu co-founder and CEO Nicole Rolet got badly bitten by her husband’s wine bug, pursued studies at the WSET and has never looked back.  She oversees the winery and its SustainaBEElity program, co-hosted the International Grenache Symposium and co-founded the International Grenache Association, then Fine Minds for Fine Wines and the Areni Global Institute for the Future of Fine Wines, which she now chairs. Nicole is knighted Chevalier of the order of Agricultural Merit by the French Government, Chevalier of Tastevin in Burgundy, of the Échansonnerie of Châteauneuf-du-Pape.
