Beneath the silky roasted parsnip yoghurt lies a layering of texture and depth—savory granola for crunch, bright parsley oil for freshness, and a whisper of smoked hickory syrup that adds warmth without overpowering. Crisp Pretzeled parsnip skins crown the dish, offering a playful nod to the ingredient in its entirety. There’s a moment each spring when you realize it’s officially salad season again. The sun lingers a little longer, the patio tables begin to fill, and suddenly lunch calls for something crisp, bright, and full of texture. At The Belted Goat, our salads shine this time of year. Layered with fresh greens, shaved vegetables, housemade dressings, and generous toppings, they’re anything but an afterthought. Think crisp romaine tossed with smoky bacon, creamy egg, sharp cheese, and a shower of microgreens. Each bite delivers crunch, salt, richness, and freshness all at once—substantial enough for lunch, yet light enough for a warm afternoon. What makes them special is balance. Bright and fresh in the glass, this Grüner Veltliner shows a lively green hue with notes of green tea, fresh-cut grass, white pepper, pear, and crisp apple. It carries the signature vibrancy the grape is known for, along with a clean, energetic finish that makes it incredibly food-friendly. While Grüner Veltliner is traditionally associated with Austria, adventurous growers have begun planting it in unexpected places — including right here in North Carolina. Marked Tree, located in the Hendersonville area of the Pisgah Valley, is experimenting with varieties that thrive in our climate, and this bottling is a beautiful example of what’s possible.
