A new addition to Chef Gagne’s spring menu — and already a favorite second course: Asparagus & Morel Mushrooms with Stracciatella, Lemon, Wild Mushroom Purée, Pesto
This dish captures the essence of the season. Tender spring asparagus and earthy morel mushrooms come together in perfect balance — bright and verdant meets deep and woodsy. A generous spoonful of silky stracciatella adds richness, while a touch of lemon lifts the flavors with freshness. Beneath it all, a smooth wild mushroom purée grounds the plate, and pesto brings a final herbaceous flourish.
It’s light, layered, and beautifully composed — a true celebration of spring’s arrival.
Join us at The Fearrington House to experience Chef Gagne’s evolving seasonal menu, where each course tells the story of the moment.

Bright, expressive, and utterly joyful — this 100% Gamay Fleurie from Anne-Sophie Dubois is a beautiful example of what Beaujolais can be in the hands of a thoughtful winemaker.
On the palate, you’ll find cherries, raspberries, and plum skin, accented by savory notes of black tea, earth, and stony minerality. The tannins are welcoming and refined — suave yet complex — giving the wine structure without weight.
What makes this bottling especially interesting is the method. While Anne-Sophie traditionally works with de-stemmed grapes and classic maceration, this is her Fleurie made using semi-carbonic maceration, a nod to Beaujolais tradition. The result is a wine that retains the bright, juicy charm carbonic fermentation is known for, while still showcasing her signature aromatic nuance and mineral backbone. Bottled in the spring following harvest, it’s vibrant, fresh, and incredibly drinkable.
Troy Revell says:
“Anne-Sophie Dubois is one of the most exciting producers in Beaujolais right now. This Fleurie has all the energy and brightness you want from Gamay, but with depth and minerality that make it seriously compelling. It’s the kind of wine you open for friends — and then wish you had bought another bottle.”
Perfect slightly chilled, and ideal with roasted chicken, charcuterie, mushroom dishes, or simply great conversation.
