Chef Gagné’s new spring menu is our favorite to date and with this dessert, there is reason enough to save room:

With its beautiful pale pink hue and bold orange script label, Lieu Dit’s Rosé of Cabernet Franc is as striking on the table as it is in the glass. This rosé is lovely and balanced, offering notes of tart bramble fruit, herbal tobacco leaf, grapefruit zest, and watermelon rind. It’s bright and refreshing, yet layered with a savory complexity that keeps it interesting from first sip to last.
As Lieu Dit’s first bottling of the year, it provides an early glimpse into the vintage — showcasing how beautifully Cabernet Franc captures Santa Barbara’s coastal charm. Carefully selected vineyard blocks are harvested early to preserve freshness and minerality. The grapes are whole-cluster pressed, fermented in stainless steel, and briefly aged in neutral barrels before release to maintain purity and texture.

“This rosé has incredible lift and minerality, with just enough savory edge to make it serious — but it’s still wildly drinkable. What makes this bottling especially interesting is the method. While Anne-Sophie traditionally works with de-stemmed grapes and classic maceration, this is her Fleurie made using semi-carbonic maceration, a nod to Beaujolais tradition. The result is a wine that retains the bright, juicy charm carbonic fermentation is known for, while still showcasing her signature aromatic nuance and mineral backbone. Bottled in the spring following harvest, it’s vibrant, fresh, and incredibly drinkable.
Perfect slightly chilled, and ideal with roasted chicken, charcuterie, mushroom dishes, or simply great conversation.
