The Fearrington Plate – May 29, 2025
FROM THE FEARRINGTON HOUSE KITCHEN
There are dinners—and then there are experiences. At The Fearrington House Restaurant, our chef’s tasting menu is more than a meal; it’s a journey through the season, thoughtfully composed by Chef Paul Gagné and his team. Each course has a sense of playful refinement that makes every bite memorable.
But what elevates the evening even further? The wine pairings. Our sommeliers carefully selects wines—some rare, some unexpected, all delicious—that perfectly complement each dish. It’s your chance to try wines you might never think to order, and discover new favorites along the way.
Yes, it’s a splurge—but one that delivers an unforgettable evening of flavor, storytelling, and discovery. Whether you’re celebrating something special or simply treating yourself, this is an experience to savor—from the first amuse-bouche to the final sip.

FROM GALLOWAY’S WINE & BEER SHOP
Burgess “Contadina” Carbenet – A structured and elegant Cabernet Sauvignon with aromas and flavors of blackberry and ripe black currants. The lush fruit is brought into balance by high tone herbal aromatics of mint, sage, and sweet tobacco. The distinctively thick-skinned Cabernet grapes provide a long, velvety finish.
Special note from Troy: “Traditional Napa producer, elegant style that’s drinking beautifully, 2018 is a back vintage, this one is a steal! I picked up several cases, but get it while you can as it won’t be available again. When it’s down to 1 bottle I’m buying the last one.”
