Billecart-Salmon Champagne & Caviar Dinner – December 11, 2025
Fearrington is proud to partner with the historic house of Billecart-Salmon Champagne for a memorable evening of bubbles and caviar! Help us welcome Billecart-Salmon’s Pierre Chichportiche to lead us on a memorable evening of select Champagnes paired with caviar-focused custom dishes created by Chef Paul Gagne.
BILLECART-SALMON
Billecart-Salmon was first and foremost the result of a union. A union between Nicolas François Billecart and Elisabeth Salmon who, in 1818 and just married, founded their own Champagne House in Mareuil-sur-Aÿ, a small village near Epernay. At their side was Louis Salmon, Elisabeth’s brother and a passionate oenologist who, from the very beginning, dedicated himself to the development of the wines.
From then on, their heirs have never stopped aiming for excellence in winemaking.
Rooted in its ancestral motto ‘Give priority to quality, strive for excellence’, the environmental philosophy of Maison Billecart-Salmon is based on a long-term vision, with respect for nature and for future generations. In today’s age of immediacy, the House is indifferent to passing trends and remains a major player in responsible winemaking, through a profound and lasting commitment. An approach that constantly calls for a return to the realities on the ground in a context of climate change. Billecart-Salmon was certified for Sustainable Viticulture in Champagne in 2017. Today, around 100 hectares are also managed with organic agriculture, including 10 hectares converted to biodynamic viticulture.
