As the evenings turn crisp and the colors deepen across the Village, Chef Paul Gagne and our pastry team have introduced a new dessert to the tasting menu that perfectly captures the richness of fall — Port-Poached Pear with Cognac Sabayon, Pâte Brisée, Dulcey Namelaka, and Poaching Fluid.
It’s elegant, indulgent, and just a touch boozy — everything a seasonal dessert should be. The pear, gently poached in port, is paired with the silky sweetness of cognac sabayon and the buttery crispness of pâte brisée. A drizzle of the reduced poaching fluid ties everything together, creating a dessert that’s as beautiful as it is delicious.

Cherrier Frères ‘Les Renarderies’ Sancerre 2024 Loire Valley, France – $32
A classic expression of Sancerre, the Cherrier Frères ‘Les Renarderies’ 2024 is a bright, citrus-driven Sauvignon Blanc that captures the freshness and finesse of the Loire Valley. Zesty and aromatic, it opens with notes of grapefruit, lime blossom, and a hint of meadow grass, leading into a crisp, mineral-laced finish that feels like pure sunshine in a glass.
Brothers François and Jean-Marie Cherrier, now the third generation of winemakers, have carried on their family’s tradition since 1927, farming organically and biodynamically across their three distinctive vineyard sites in Sancerre. The blend from these diverse terroirs gives this wine its remarkable balance and depth. Aged on fine lees for up to ten months, it gains beautiful texture and length without losing its lively, refreshing energy.
Perfect alongside light vegetable dishes, seafood, or a delicate salad, it’s also simply lovely on its own as an aperitif.
