Fearrington is proud to partner with the historic Maison Billecart-Salmon, a new Champagne partner of Relais & Châteaux, for an unforgettable evening celebrating two timeless luxuries—bubbles and caviar. Join us for this exclusive dinner as Billecart-Salmon’s Pierre Chichportiche guides guests through an exceptional tasting of Champagnes, each perfectly paired with caviar-inspired creations from Chef Paul Gagne and his culinary team.
Founded in 1818 by Nicolas François Billecart and Elisabeth Salmon, Billecart-Salmon has remained family-owned for over seven generations. The house is renowned for its devotion to craftsmanship and sustainability—certified for Sustainable Viticulture in Champagne since 2017 and now managing over 100 hectares organically. Each cuvée reflects their enduring philosophy: “Give priority to quality, strive for excellence.”
Hosted in Fearrington’s intimate wine cellar, the evening promises an extraordinary combination of history, artistry, and taste. This $295 per person experience ($385 including tax and service) offers guests a rare opportunity to explore one of Champagne’s most revered houses—right here in the heart of Fearrington Village.

Château Belá Riesling 2020 – $25
A collaboration between Ilona von Krockow and legendary winemaker Egon Müller, Château Belá Riesling is a stunning expression of Slovakian terroir. Dry, mineral-driven, and impeccably balanced, this wine opens with aromas of lime zest, passion fruit, apricot, honeysuckle, and rose, leading into a rich, structured palate with lively acidity and a clean, elegant finish.
The Château Belá estate, nestled on the banks of the Danube River, dates back to ancient Roman vineyards. Today, it represents a new chapter for Central European winemaking—producing Rieslings that rival the best of Alsace and the Mosel. Crisp yet complex, this wine is a revelation for any Riesling lover and a perfect match for seafood, soft cheeses, or simply good company.
