“An absolute icon of an American winery, the Peter Michael estate sets a bar that few have reached. Founded in 1982 by the English engineer/entrepreneur, Sir Peter Michael became enamored with the quiet yet dramatic property and dedicated both his life and his future family’s commitment to the land. We are lucky to have the 2016 vintage of their La Carrière Chardonnay still available to share. Accents of orange blossom, acacia, honey and vanilla complete the elegant bouquet. Citrus oil, white peach and lemon highlight the minerality. Magnificent concentration and elegance on the palate sculpt the structure of this wine, offering intensity and richness. Pick some up here.

ELEVATING THE EVERYDAY — TEA-BRINED CHICKEN ROULADE
At The Fearrington House, spring brings more than just blossoms in the garden—it inspires fresh, seasonal flavors that surprise and delight. One of the newest additions to Chef Paul Gagne’s spring menu is a perfect example of this creativity: Tea-Brined Chicken Roulade with Fennel & Blood Orange, Pistachio, Mustard Oil, and Citrus-Fennel Infused Cream
Chef Gagne is known for his thoughtful, elevated approach to familiar ingredients—and chicken is no exception. “I love the challenge of making something as everyday as chicken into something unexpected,” he says. The dish is brined in tea for depth and tenderness.
What truly sets it apart is the bright, aromatic pairing of fennel and blood orange, a flavor combination that Chef Gagne holds dear. “Fennel takes me back,” he shares. “It was one of the first ingredients that really opened my eyes during an early restaurant job—it’s still one of my favorites.”
With a drizzle of mustard oil, and served with a velvety citrus-fennel cream, this dish is both comforting and refined—a beautiful expression of spring on a plate.
