Spring brings vibrant new ingredients to our menus, adding fresh flavors and a seasonal touch to every plate. Over the next two weeks, Chef Paul Gagne is rolling out exciting updates at The Fearrington House, and we’re especially in love with one of the latest additions to our four-course menu. When we asked Chef Gagne about his inspiration, he shared that he has been exploring more plant-based creations, embracing spices and flavors that bring brightness and depth to each dish.

“As much as any producer, Barboursville has played a pivotal role in
putting Virginia on the map as a wine region. Their wines
beautifully balance New World and Old World styles, and the

blackberry, dried herbs, and cranberry shine upfront, while layers
of earth, compote, and a hint of licorice add depth and intrigue.
