One of the standout dishes on Chef Paul Gagne’s summer menu is his beautifully balanced Tuna Tartare, featuring smoked dulse, seabuckthorn, daikon radish, dashi, and a touch of nori powder for a subtle umami finish. Bright, clean, and delicately layered, it’s a true celebration of summer ingredients.
This dish is available as part of the prix fixe menu in The Fearrington House dining room, while a slightly different version—equally elegant but more casual in presentation—is featured on The Fearrington Bar menu, perfect for a relaxed evening with a cocktail or glass of wine.
