“The Fearrington House Restaurant has a reputation for impeccable service,” says Beverage & Service Director Paula de Pano. “We believe that the combination of Southern charm and warmth, combined with effortless professionalism contributes to all of our guests’ dining experience. We are a hospitality-driven team that loves wine and food and we all want to share its joys and pleasures to our guests.”

The Fearrington House Restaurant’s beverage program includes a wide selection to accommodate different tastes and preferences – experience it with a cocktail or beer at the bar or wine pairings with dinner.

On navigating the Wine List, “We try to make it as effortless as possible for our guests to go through by listing the wines geographically from north to south and varietally assessed by quality level if it exists for a region,” says Paula. “The wine list offers such a variety of bottles at different price points as well. I believe we are past the era of not discussing what guests are comfortable spending. When a guest’s price point is introduced to the conversation, you’ll be surprised at how determined a sommelier can be to find the best bottle that suits your tastes and budget.”

On Wine Pairings, “It takes the intimidation and guesswork out of the equation for our guests who do not want to go through an entire book of wines,” says Paula. “It also lets our guests try different wines that they wouldn’t normally pick. Pairings enhance the enjoyment of how different wines complement particular dishes.”

Meet the Team

Paula de Pano

Paula de Pano, Beverage & Service Director

Paula joined the Fearrington House in 2010 as a sommelier after graduating from the Culinary Institute of America in Hyde Park, New York. It was during her time at Fearrington that she received her Advanced Sommelier distinction with the Court of Master Sommeliers. In 2014, she moved to New York City to be part of the sommelier team at the three Michelin star restaurant, Eleven Madison Park. After two years, she returned to Fearrington Village as the Beverage & Service Director. Read more about Paula here.

Laura Francis

Laura Francis, Sommelier

Laura grew up in a family that enjoyed traveling and eating, so she understood the joys of the hospitality industry from a young age. While finishing up her bachelor degrees in French and Spanish, she began attending classes for certificates in Hospitality Management. Laura’s love for wine became stronger while working at the Biltmore Estate Winery, and she decided she would eventually become a Sommelier. Laura moved back to The Triangle in 2013, and began working at Herons, before moving to Ãn as Beverage Manager.
