Les Jamelles, Chardonnay, Pays d’Oc, France
This Chardonnay is grown in SW part of France, not far from the Spanish border. Les Jamelles does see some oak barrel aging, which lends a richer texture to the Chardonnay. Green apple, apricot, hazelnut, and butter; pair this with Cornish game hen, fried fish, latkes with applesauce, apricot and almond coucous and roasted chestnuts.
Domaine Martinolles, Pinot Noir, Pays d’Aude, France
From the Languedoc region of France, because of the cooler climate, this area tends to focus more on Burgundian grapes, such as Pinot Noir and Chardonnay. Focused with flavors of tart cherry and pepper, this is a great wine to pair with grilled salmon, smoked salmon blini with dill, mushroom risotto, beet salad or mince pie.
De Martino Estate, Cabernet Sauvignon, Maipo Valley, Chile
The De Martino family focuses solely on producing wines that reflect best in particular terroirs of Chile — in this case, Carmenere and Cabernet Sauvignon grow best in the Maipo Valley of Chile. As this Cabernet isn’t aged in oak, expect much fresher fruit tones like blueberry, currant, and cassis, with a pinch of spice. Drink this with roast beef, beef wellington, rosemary potatoes and caramelized onions.
